竹塩には強い還元力があります。
還元力とは、酸化(サビ)された物質を元に戻して還元させる力のことです。酸化還元力の実験で精製塩(化学塩)と天日塩(天然塩)とはほとんど差がなく、竹塩が最も強い還元力があることがわかりました。また竹塩を焼く回数が多ければ多いほど還元力が強いこともわかりました。

竹塩の原理
仁山竹塩の製法竹筒に天日塩を詰めて黄土で口を塞ぎ、松の木で焼きます。焼いた塩を粉末にして再び竹筒に詰めて松の木で９回繰り返して焼ます。この時9回目は1,300℃の高熱で塩を溶かします。
